Author Biography
Raphaël Haumont is a lecturer and researcher in physical chemistry of materials at the Université Paris Sud. He is head of the academic chair “Cuisine of the Future”, the author of numerous books and a regular on TV. https://raphaelhaumont.wordpress.com/
Thierry Marx is a Michelin star chef, specialised in molecular gastronomy. He is a founding member of the Collège Culinaire de France (Culinary College of France) and has set up Cuisine Mode d’Emploi(s), training schools for the catering and bakery professions. He is a committed chef who is behind several initiatives having a strong social and environmental impact. He is currently head of the Mandarin Oriental kitchen, Paris and is one of the judges on Top Chef, France. He is the author of several books. http://www.thierrymarx.com
