Author Biography
Juan Carlos Menéndez Cogolludo (Madrid, 1968), has been surrounded by stoves from his childhood and all along his professional career. He has been conducting a thorough R&D in gluten-free breadmaking and bakery, which has brought him to revolutionary formulas that have made him an idol in his sector. He is the founder of the first gluten-free breadmaking school El Espíritu del Bosque and cofounder of M&G Maestros Sin Gluten (Gluten Free Masters), a professional consulting agency. He has worked in Canal Cocina, a TV channel devoted to gastronomy with chefs of high prestige, and he has also collaborated with other TV stations such as Antena 3 and Telemadrid.
